Nat Sturm's 5 Bean Bake

The following recipe was requested at our very successful Opening Day on the Bay bar-b-que. It is a result of a couple of brews prepared through the years, and can be adjusted according to party attendees.

1/2-1 lb. bacon 1/2-1 lb. ground beef (optional)
2 lg onions, chopped 4 T granulated sugar
2/3 C brown sugar 1/2 C catsup
1/2 C barbecue sauce (Hickory) 4 T prepared mustard
4 T molasses 1 tsp chili powder
2 tsp salt 1 tsp pepper
2-16 oz cans kidney beans 2-16 oz cans butter beans-lima
1-32 oz can pork & beans 2-16 oz cans garbanzo beans
2-16 oz cans black beans Worsteshire sauce as wanted
4 tsp Bull's Eye Steak Sauce  

Bake covered at 350 for 1 hour, or 2-3 hours on high in crock-pot. Serves 24.

 




The Korbmeister's Ceviche

This classic south of the border specialty can only be made with very fresh fish. Any flaky whitefish will work; rockfish is a good choice.


Marinade:
2 pounds very fresh whitefish fillets, chilled and washed
one cup fresh lime juice


Cube fish into chunks about the size of sugar cubes and cover with lime juice in a sealed container. Place in refer for at least 4 hours. Gently toss and rotate fish every hour to assure even absorption. If you can, use a vacuum sealed container - it will speed the process. The marinade can be left overnight.


Preparations:
Cube the outside meat of two tomatoes, discard the center pulp
Thin slice and mince one jalapeno (seed and center pulp removed)
Thin slice and mince ½ pasillia pepper (seed and center pulp removed)
Thin slice and chop one red onion (two if small)
Chop 1/2 bunch of cilantro
Peel and mince 1/2 bulb of garlic
One tablespoon cumin
One tablespoon basil
One tablespoon oregano
One half tablespoon fresh cracked pepper
1/4 cup quality olive oil
Salt / season with hot sauce to taste


Final combination:
Drain chilled / marinated fish, add the prepared ingredients above, allow to marinate for 4 hours in refer mixing gently each hour. Serve with tortilla chips, crustini or on cheese quesadillas.

 




Duchess Good Luck Veggie Chili

The following is a recipe which culminated due to the fact that my husband is a vegetarian. However, it is good luck for those who would like to sell your vessel. A pot of this chili was simmering when "Duchess" (1939 39' Matthews previously owned by us) was boarded and purchased in 2004. Ergo, it is a "Good Luck Dish."


2 Lg Sweet onions, chopped
1 Green pepper
2 Cans Tomatoes, peeled or sliced
2 Cans Black beans
2 Cans Dark kidney beans
1 Can Pinto/Lima beans
1 Can Garbonzo beans
1/2 to 1 Pkg Chili Mix
2 Tbsp Brown sugar or molasses (or both)

Saute onions and green pepper in 1 tbsp butter or oil. Stir in balance of ingredients and simmer... the longer the better. Top with cheddar cheese & green onions.
